Al entered the baking industry in his youth as part of a small family-owned bakery. He was trained in all aspects of baking and pastry as he worked side by side with the company’s bakers and pastry chefs. Al continued his training at George Brown College and expanded his knowledge in modern baking and pastry techniques. He attended several managerial courses at Humber College and received his Ontario Management Development Program certificate in 1984.
In 1991, Al started managing an in-store bakery & café in Woodbridge Ontario, where he was responsible for operations. Two years later, he opened a small manufacturing and wholesale business. Manufacturing frozen puff pastry and ready-to-bake products utilized his knowledge of baking and he was able to provide technical support along with his strong ability to communicate with customers and suppliers.
In February 1996, Al became a sales representative for Lentia Enterprises (now IREKS NORTH AMERICA Ltd.), responsible for Toronto and Western Ontario. In 2000, he became General Manager (Eastern Canada) with responsibilities for operations and sales. Currently, Al is pursuing his passion for sales and is responsible for industrial bread bakeries, cake manufacturers and distributors.
Since 1996, Al has been an active member of the Canadian Pastry Chefs Guild and currently holds the position of President.
